Small bread spelt rolls with aromatic herbs

Ingredients for 8 rolls:

  • Spelt flour: 200g
  • Lukewarm water 125ml
  • Extra virgin olive oil: 2 tbsps. + 1 for the herbs
  • Salt: 7g
  • Honey: 5g
  • Dry yeast: 2 tsps.
  • Mixed aromatic herbs

Directions:

  1. In a large bowl (or in the stand mixer) mix the sifted flour, the salt, and the honey.
  2. In a small bowl dissolve the yeast in the water and the oil and pout it onto the flour dough. Knead the dough until smooth and elastic. You may have to add little water to get the right consistency.
  3. Knead vigorously for about 10 minutes to activate the yeast. Put in a warm place to rise until doubled in volume (about 90 minutes)
  4. Blend the aromatic herbs with the oil and a pinch of salt.
  5. Divide dough into 8 pieces of about 50g each. Roll the pieces into ropes and brush them with the aromatic mixture. coil rope and tuck in the end so that it comes up through the middle.
  6. Place them 2 inches apart on a baking sheet covered with baking paper. Cover and let rise for 30/40 minutes.
  7. Bake at 200 degrees C (190 degrees C) for about 15 minutes until they are done. Let them cool down and serve.
