Spelt soup and mushrooms

Ingredients for 2 people:

  • Spelt: 120g
  • Mushrooms: 200g
  • Garlic: a clove 1
  • Vegetable broth
  • Parsley: a twig
  • Laurel: a leaf 1
  • Extra virgin olive oil
  • Salt

Directions:

  1. Stir fry the garlic in a little oil, add the chopped mushrooms and the laurel. Heat for a few minutes and stir well. Season to taste and remove the mushrooms from the pot.
  2. In the same pot bring about half a liter of broth to a boil. Rinse the spelt in running water and add it to the broth.
  3. Cook according to the packaging directions. Pour more broth if the soup gets too thick.
  4. Ten minutes before the spelt is done, add the mushrooms. Stir well and adjust with some salt.
  5. Garnish with chopped parsley and a little raw olive oil. Serve hot.
